Ideally Type 1 Diabetics are looking for foods with a GI of 55 or below. This will ensure that we stay fuller for longer and that blood glucose levels. Studies of patients with T1D found replacing high-glycemic-index carbohydrates with low-glycemic-index carbohydrates improves blood sugar control and reduces hypoglycemic episodes.
